Dale’s Baked Beans

4 cups white navy beans

1/2 pound salt pork - rinsed with cold water - then cut into 1 inch cubes.

1 onion – finely cut.

1/2 cup fancy molasses

1/2 teaspoon pepper

1/2 teaspoon dry mustard

1 cup ketchup

1/2 cup brown sugar

Sort and rinse beans.

SOAK BEANS OVERNIGHT in cold water. Drain.
Add 5 cups cold water, cover, heat to boiling, then simmer 30 minutes or until nearly tender.
Drain – reserve the water.
Add ingredients (except pork/bacon) in with the beans, stirring gently to combine
Pour entire mixture into the bean pot.
Add enough reserved water to cover mixture
Place salt pork on top – push down into mixture.
Cover with lid and bake in oven at 250°F for 7 hours.

Add reserved water as needed to keep beans covered. One hour before serving, remove cover to darken up the beans.
